Food Safety Training for food concessionaires in UPLB conducted

A recent Food Safety Training, organized in collaboration with the Institute of Food Science and Technology (IFST) and the Interdisciplinary Studies Center on Food & Nutrition Security, took place on March 23, 2024, at IFST, CAFS. Specifically designed for food concessionaires operating within the UPLB campus, this training aimed to equip food business operators and handlers with essential knowledge to maintain safe and nutritious food for UPLB constituents while safeguarding their businesses. Moreover, it served as a vital prerequisite for operating food service establishments on campus, aligning with the standards outlined in the Food Inspection Checklist established by DOST-FNRI.

Led by Dr. Florencio C. Reginio, Jr., UPLB BAO Program Development Associate on Food Safety, the full-day program commenced with comprehensive lessons and discussions led by experts in various aspects of food safety. These sessions provided participants with a deep understanding of crucial topics, ranging from proper food storage and keeping the kitchen workplace clean and sanitary.

Following the theoretical sessions, participants engaged in hands-on activities aimed at reinforcing their understanding of best food safety practices. Through practical exercises, such as proper receiving and storage of food, and proper handwashing and preventing cross-contamination, participants gained valuable insights into maintaining food quality. Furthermore, activities focused on calibration and proper monitoring of the temperature of food, proper cleaning and sanitation, and proper work attire and safe food serving practices were also conducted.

The training not only offered a wealth of knowledge but also provided an enjoyable learning experience for participants. Upon completion of the activities, food concessionaires underwent a post-test to assess their acquired knowledge and skills.
